Buttermilk Cheddar Biscuits



Uh....YUM-MY!! This morning, I made the Buttermilk Cheddar Biscuits on page 228. I started later in the morning than I wanted to and had a terrible attitude. But then I ate these biscuits....and the world got a little brighter.
This was a pretty straightforward recipe. I followed it to the letter except for not having 'Maldon flaked sea salt'....and I used old buttermilk...but it didn't matter. I did use fancy sharp white cheddar - selected by JJH - and that totally mattered. I think the sharpness of the cheese made these biscuits.
I did cook them on parchment paper - which worked beautifully....except for when I tried to take the pan out of the oven and grabbed the paper instead of the whole pan and dumped two of the biscuits on the door of the oven. Then, in my frustration, I took the pan out too quickly and sent 3 more of the 8 total biscuits sailing onto the floor. Nice. So 5 of the 8 biscuits would be considered contaminated. Yeah, well, we ate them anyhow. That's just how I roll. Other than the crazy cooker mishaps....these were tender, flaky, tasty, and overall, easy. I will most definitely make them again.
