Country French Omelet








Okay guys, you are now privy to my first blog post EVER. I'm heading to Bolivia this weekend for two weeks, so ACP and I tried really hard to get a bunch of cooking done today! Thankfully, we made some great food.


This omelet was great and super easy. I didn't have any chives, but I really don't think that affected the taste much. It may have just made it not as "pretty."


I would change only a few things about this recipe. It states to cook the bacon for 8 minutes until browned but not crispy. I like my bacon on the crispy side, but since it had to cook in the oven after I worried the bacon would be overdone if I cooked it to my liking. In the future, I'll crisp up the bacon more than recommended in the recipe. I also used extra potatoes. YUMMY!

The omelet states it serves 2, but that's more like 4 because it had 5 eggs in it. And we had the cheddar biscuits with it (but I'll let ACP tell you all about that.)

All in all, a great breakfast recipe. The oven cooking made the eggs come out just right, and it seemed so much nicer than just scrambled eggs with bacon and potatoes. I look forward to making again.
